Of the high-end restaurants, L"Escale, whose kitchen Verheyden oversees, serves traditional dishes like the "awfully spicy" boudin Creole (black pudding) and chatini (a traditional chutney-like salad of papaya, green mango and/or pumpkin, served cold or lukewarm).
